Poha is easy and a healthy maharashtrian breakfast. It is made up of flattened rice and is popular in maharashtra and Gujarat. Poha with selected veggies, peanut and lemon tastes perfectly delicious.
I am sure you should also have grown up eating poha in the breakfast.
Here is my nutritious recipe to make this traditional breakfast.

INGREDIENTS:

  • Poha - 2 cups.
  • Chopped onion - 1 medium.
  • Chopped potato - 1.
  • Mustard seeds.
  • Cumin seeds.
  • 8-10 Curry leaves.
  • Chopped green chilly - 1
  • Peanuts - 2 tbsp.
  • Turmeric powder.
  • Lemon juice - 2 tsp
  • Sugar - 1 tbsp.
  • Oil.
  • Chopped coriander leaves - 2 tbsp.

RECIPE:
  • Wash poha in a strainer gently with your fingers in running water.
  • Sprinkle salt and sugar over it and keep aside.
  • Heat oil in a pan and add mustard seeds and cumin seeds.
  • Add veggies(except potato), salt, curry leaves and peanuts in the pan.
  • Cook veggies for a minute.
  • Add potatoes and salt according to potatoes.
  • Mix and cover the pan until potatoes turn tender. Stir in between.
  • Add turmeric powder,salt and Red chilly powder in the pan.
  • Mix well and cook for a minute.
  • Add soaked poha in the pan.
  • Cook for the 2-3 minutes and add coriander,sugar and lemon juice.

Idli fry is an easy and yummy dish made up from leftover idlis.
